Grinding Tips Never grind more coffee beans than you need for immediate use. Once ground, air reaches the aroma-giving oils, causing them to evaporate and the coffee to lose its aroma. Ground coffee begins to lose its flavor almost immediately after grinding. Different brewing methods require different grind sizes. Coffee made by dripping should be ground to resemble granulated sugar. The dripping process should take between four and six minutes. If it finishes in less than four minutes, grind the beans more finely. If it takes longer than six minutes, grind the beans more coarsely. Espresso requires an especially fine grind; the coffee should be almost like powder and slightly gritty. The secret to a proper espresso grind is its brewing time. One ounce of espresso should brew in about 25 to 30 seconds. If it brews in less than 25 seconds, grind the coffee more finely. If it takes more than 30 seconds, grind the beans more coarsely. Storage Tips Never store coffee in the refrigerator. It absorbs the aromas and flavors of other foods in the fridge. Freezing coffee can also be detrimental, and we do not recommend it unless you are storing coffee for a long period (two weeks or more). Coffee should be kept in a clean, dry, airtight container in a cool, dark place. Tips for Using a French Press When using a French press, grind the coffee beans coarsely. If the coffee is ground too finely, it can become bitter and difficult or even impossible to press down. Here’s a method for using your French press that you might not have heard of: Heat a cup of milk (skim milk works best) on the stove or in the microwave until it is so hot you can’t touch it with your finger. Do not overheat the milk to boiling. Next, pour the milk into a clean, empty French press and move the plunger up and down for a few minutes. The milk volume will increase 3-4 times, making it perfect for cappuccinos and lattes. Tips for Making Moka Coffee Use a filter specifically designed for your filter basket. The most common are bleached white paper filters, but brown paper filters are also available. Washable metal mesh filters, which are also environmentally friendly, work well too. Making Espresso When buying a home machine, choose one with a pump that forces water through the coffee. Avoid steam-based machines. A good pump machine usually costs between 300 and 1100 euros, but the investment is worth it if you want delicious espresso.
